Hi All,

There's a meal on the menu at Zizi's that I do a relatively good spin off meal from. The meal is (prepare for some terrific spelling mistakes, apologies...)

Spagetti Strozza Preti Rosa... (Or at least that's how it sounds in my head).

The only thing that I'm not happy with is the seasoning/marading of the chicken. What I do is nice but not quite right.

Does anyone know what Zizi's use? Or if you are aware of the dish, do you have any idea what I could use at home?

Depends on the base of the dish. What kind of sauce is with it or is it quite plain?

Lemon goes well with chicken but I like to marinate chicken with a bit of ground nut oil, chilli, ginger and lemon grass. But this is not a pasta base dish!

found out its called this 'strozzapretti pesto rosso' but can't find a receipe for it, maybe email the resturant?

Strozzapretti Pesto Rosso
Chicken, red pesto and creme fraiche with spring onions. 7.95

Pesto is one of those things that is made a lot of different ways - maybe you can find theirs by trial and error.

Here's one:

Red Pesto(makes about 180ml)

25g Pine Nuts
25g Garlic Cloves
25g Grated Parmesan
5g Basil Leaves
20g Sunblushed or Sundried Tomatoes
120ml Extra Virgin Olive Oil

Place the pine nuts, garlic, parmesan, basil and tomatoes into a food processor and blend. Gradually add the olive oil and season to taste. This can be made well in advance.

It's just the chicken I have issues with, not sure of the marinade. I don't think it's the pesto stuff they use. I'm sure it's been in something else first... well 75%

China - have you tried just asking your waiter what they marinate the chicken in? If he tells you the answer, don't forget to give him a bigger tip:)

Excellent point well made... I didn't want them to think I was trying to copy the recipie though... ;0)
Dear Sir/Madam,

As a company policy we do not divulge certain details of our recipes. The marinade recipe for our chicken, for example, is a specific blend created by our Development Chef.

I can, however, advise of the other main ingredients, ie. spring onion, creme fraiche, red pesto and parsley.

I am just going to venture a guess here - since it is an Italian restaurant - that they marinate the chicken in garlic and olive oil and MAYBE some dry Italian Seasoning - but I could be wrong:)
