Someone told me not to eat rhubarb after the end of July because the poison from the leaves travels down the stalks therefore making it also poisionous.

Complete and utter rubbish!
Complete twaddle, made a pie two weeks ago and didn't die. It is also rubbish that you can't compost the leaves.
Some things in the countryside are deemed to be poisonous after a certain time, blackberries as well, it is folk lore.
we grew up in the country and we had rhubarb blackcurrents strawberries raspberries and picked blackberries from the edges of the fields, non of us succumbed to any food poisoning, fatal or otherwise.
I heard you shouldnt pick rhubarb after the longest day so the plant could build up its strength for the next growing season. So maybe that and the poisonous leaves story got mixed.

We always call rhubarb "chalky teeth" for obvious reasons.
