Couscous is a form of pasta used in many middle eastern and african dishes. It is made from semolina flour, and to prepare it all you have to do is add a measured amount of boiling water to the couscous in a bowl.
Add fresh mint leaves, raisins, dried chopped apricots, fresh red chilli and lime or lemon juice (freshly squeezed) for a tasty salad. Serve with chargrilled chicken or fish for a quick and simple dinner.
