none ! why use a deep fat fryer ?
sunflower
sunflower , the trick is to change it regularly as the compositon of it changes, everytime it is heated. That's why it goes gloopy.
Other specialist oils such as olive, burn at 2 low a temperature
I use sunflower oil in mine, there is no harm in using a deep fat fryer as long as you don't use it for every meal. Some things just don't taste the same cooked other ways...oven chips are horrible in my opinion,I much prefer deep fried.

Thanks everyone for your replies. I don,t use my deep fat fryer everyday but when I do use it I have been using corn oil. Now I will be using Sunflower oil from now on.
Sunflower is chloresterol free as well, plus has a naturally high vitamin E content which gives it a naturally longer life. It does not carry flavours from one cooking to the next and can be burnt at a high temp for longer periods than other veg oils without breaking down.

To get a longer life from the oil - filter through a fine cloth to remove impurities. Make sure the oil is only filled to 1 third of the container or to the fill level if an electric fryer, to allow for expansion when you put items in to cook. Use the right temp for the item too.

Why use one? It is a simple method of d'ehyrdating' foodstuffs, which means nutrirional content is maintained (i.e. boil potatoes in water without their skin and you loose 70% of thier vitamin content) deep frying is quick and gives a good result when used properly.

Thanks alot Nickmo for the great information.
Glad to help..!
Tip...Once oil has cooled, I use a plastic funnel and one of those conical Melitta coffee-filter papers to strain it back into the bottle. This returns clean oil, removing even the tiniest specks of whatever you've been cooking, and takes away most odours out of the used oil.
