Help with muffins needed

Can you let me know which flour is best to cook muffins - is it plain or self-raising? I ask as the muffin repies I have found alternate between both many require baking powder as well. HELP !!!

Plain flour will need baking powder but self-raising wont. I'm not a very good cake maker, but try this link to uk tv food, they're pretty good.

Hi Osprey, I do a lot of baking, mainly cakes but sometimes make currant tea cakes, Hot Cross Buns. Peshwari Naan Bread etc.

Personally, I would suggest that you follow each recipe as given. So if it says use Self raising Flour, then use self raising flour. If the next one says use Plain Flour with Baking powder, then thats what you should use. Don't try and substitute the ingredients. If you do, you may not get the right result.

If the recipe says use Butter, then use Butter - not margarine or soft spread. It does matter.

Try all the different recipes you have for your muffins and you will soon find out which turned out the best. And hopefully, you will share your best recipe with us. Good luck, and happy baking.

My daughter has a Muffin mania book which calls for All Purpose Flour. She uses Plain flour with Baking soda and Bicarbonate of Soda with great success every time.

Just a thought........ In England, muffins are flattish rounds of bread used for sandwiches, in American their muffins are (our) cakes (like as in American muffins). So we may all be talking at cross-purposes here.
