Can I reheat risotto

Hi,
Thinking about making a risotto in advance (to take to a friends with me) and wondered if risotto withstands this process?
Don't want to ruin the ingredients!
oh, it will have NO meat in it.....

For more on marking an answer as the "Best Answer", please visit our FAQ.Cooked rice that has not been handled properly can harbour bacteria--bacillus cereus I think it is called-that can cause food poisoning. You MUST cool down the rice quickly and then store,and it must then be re-heated thoroughly. I used to re-heat rice but since doing several food safety courses I know it is not worth taking the chance.....particulary if serving to others.
