Maybe it is this: Aubergines with oil Melitzanes me lathi
Cut off the green end of each aubergine and in each one make a deep slit almost from end to end. Heat the oil in a pan and fry aubergines over low heat for 10 mins turning once or twice. Remove from pan and put in a casserole dish. In the same oil in the frying pan, saute the onions until soft. Add 2 peeled and chopped tomatoes,parsley,garlic salt and pepper. Cook for 15 mins and fill the slits of the aubergines. Force remaining tomatoes through a sieve and pour over the aubergines. Add salt,pepper and sugar. Cover and cook over a low heat or in med oven for 40-45mins. Can eat cold. serves 4.
Sorry, I forgot to put the ingredients first:
2lbs aubergines(long type) chopped parsley
1 cup olive oil 3-4 cloves garlic sliced salt and pepper
2 large onions thinly sliced 2 tablespoons sugar
2lbs ripe tomatoes.
Sometimes you will find variations of recipes in Greec just like any other Country. If you want to add grated cheese, I would just add it before you put it in the oven. I am from the UK but live in Greece and cook Greek food everyday. I think Greek food is truly delicious! By the way the cheese you had in the taverna was probably Feta not Haloumi as Haloumi is cypriot.
