bonfire party desserts

we're having some folks round for a bonfire & some food. On the savory side we're doing chiili & jacket potatoes, burgers & hotdogs. But I'm not really sure what to do for pudding. It needs to be something people can eat without necessarily having to sit down, and soemthing not too messy. I'm planning on making a pumpkin pie, but can't really think of anything else.

does anyone have any ideas?

I had a lovely dessert at a summer bbq.

I dont know how it was made but it was sweet waffles with a custard over and frozen fruit somehow then baked in oven til piping hot.

Served in bowls with cream or icecream.
Hand food is the ultimate ease....we do something called 'star picnics' in the summer, where we prepare a picnic to take out into a field after 8PM, where we wait for the stars to come out. Then we have plates of brownies (some with walnuts, some without), chocolate chip and pecan biccies, and rice krispy bars.) I realise it's nothing posh, but they are so easy for people to grab a few. We once made a box of mini-pavs..but it all became rather messy...so that's not on the list any longer.
My daughter likes for us to also bring a large bowl of strawberries that she can eat with the brownies...

pinkkitty - You've got to have parkin!!!!! And treacle toffee!
pieces of fruit (strawbs, banana, etc) and sponge fingers and a bowl of chocolate fondue to dip them in. you don't need to have the fondue thing lit, the chocolate will stay runny enough for ages. i just make it in a pan on the hob and then we all dip into the pan at the table.
Pinkitty: I've got to ask...as you're among a very small number of people in the UK who make pumpkin pies...it's almost a staple in our home, along with sweet potato pie.

Do you add ginger, cinnamon, and nutmeg to yours? Personally, I can't imagine making one without it, but I have friends who abhor the idea of cinnamon and especially nutmeg in things. I even use nutmeg and cinnamon in the barbeque sauces I make.

I'm no chef, but I enjoy cooking a lot...

Parkin!!! Every time!!
My Mum makes such good parkin, she sells it along with the plums from our trees in September.
Except she puts it in the Aga and forgets it's there, so the only time we remember it is when we stand in the middle of the field and smell the burning!!!!

yes, i put ginger, nutmeg and cinnamon in my pumpkin pie, and cream. Most American recipies seem to suggest evaporated milk, but i think cream is much nicer.

what about doing stuff in baking foil and putting them in the fire .........easy to do and u only need a spoon and some squirty cream....

bananas with sliced mars bar.......apples cored and stuffed with dried fruit.......even hot strawberries

2 cups mashed sweet potatoes
� cup butter, softened ( I prefer Danish Butter)
2 eggs, separated
1 cup packed brown sugar
1/4 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup evaporated milk or cream
1/4 cup caster sugar
pie crust I make my own, but I suppose you could buy one of those ready-made ones.

DIRECTIONS
Preheat oven to 200 degrees
Combine the sweet potatoes, butter, egg yolks, brown sugar, salt, ginger, cinnamon, nutmeg and evaporated milk. Blend well, using a wooden spoon.
Beat egg whites until stiff peaks form; add 1/4 cup sugar and fold into sweet potato mixture.
Pour into pie shell and bake at 200 degrees for 10 minutes. Reduce heat, then bake at 175 degrees C for 30 minutes or until firm. The texture should be just as with your pumpkin pies.

In the autumn I often make this. Alternatively, for dinners when we have chicken, I slice up sweet potatoes, then boil them until the consistency is soft.

Mash them with double cream, butter, course pepper, salt, and about two tablespoons of brown sugar. Place into a baking dish, add a few minimally thin squares of butter on the top, sprinkle with about a tablespoon of brown sugar and bake at 200 degrees for twenty minutes. It�s one of my children�s favourites!

Got to have toffee apples at bonfire night, and/or honeycomb/cinder toffee!! Yummy!
Apples - stick an ice cream stick in them.
Dip in melted caramel - let cool.
Dip in melted chocolate.
You can dip them as many times as you want if you cool them between dips - to make the coating several layers thick.
While still melted, sprinkle or roll on nuts, sprinkles, coconut, crushed cookies, etc.
Pink -

You can take bananas. Peel them. Cut them in half. Put an ice cream stick in the cut end. Freeze them.
Dip them in melted chocolate.
Roll them in chopped nuts, coconut, sprinkles, crushed cookies, etc. whatever makes you happy.

Very simple.....make two strawberry jellies, take half of the liquid and add black food dye and leave the other red. I suppose you could you blackcurrent jelly instead of black dye.

Toffee apples are a must

Have always fancied making toffee apples, as Sainsbury's always seem to sell out of them really fast, and i bet homemade ones are much nicer!
Village Vicar - Is pumpkin pie the same recipe as the sweet potato pie but with pumpkin? I've never made it but every year we throw out the middles of the pumpkins when the kids make their lanterns, it seems such a waste. Thanks
