Merry Christmas everybody. Can anyone tell me if it's ok to prepare parsnips today for cooking tomorow, I've done it with lots of other veg but seemed to remember from somewhere that the parsnips would discolour perhaps? Any help appreciated as I hate doing veg when could be having fun.

you're right, they do discolour. i've never found a way to stop it happening so always have to peel and chop them immediately before cooking. for christmas this year however, when i too would prefer to be having fun, i've bought frozen ones, which are really nice and take 10 seconds to open the bag and put on a baking sheet. i'll still drizzle them with honey too.
even the word parsnip makes me feel sick!!! YUK!!

have a nice christmas and dont make them look like roasters to fool the people who dont like em!!!..... like my MIL does!!!
Brian Turner is on Saturday (Christmas) Cooks and he said to par boil the parsnips today (also parboil roasties and prep carrots and sprouts), put them in sandwich bags and put them in the fridge until tomorrow. That way when you take them from the fridge you just have to roast the parsnips and taytos, and boil the sprouts / carrots.

I have to say this is the first Christmas dinner i have had to cook so I don't know about discolouring
A few weeks ago, I parboiled both my potatoes and parsnips. I then lay them out in a single layer on a tin with a sheet of greaseproof paper on it. On Christmas Day, I cooked them straight from frozen and they were absolutely delicious.
