I know it's not what you asked but you should really only grate parmesan as and when you need it.
If you mean a tub of grated parmesan bought from a non-refrigerated shelf in the supermarket then a cool, dry cupboard will do. If you mean fresh parmesan then store it in the fridge and as thewillow points out only grate it when needed.
For the supermarket stuff, I have a stainless steel shaker like a big salt shaker with an airtight plastic lid. That lives in the fridge. The real stuff just grate as needed but wrap the block in cling film or aluminium foil. Leave that in the fridge also. Here's a cheesy grin for you :)
I store grated cheese in the freezer. If you shake out as much as you need, it thaws in about 10 mins and the rest keeps for ages in an airtight container. I agree though, I only grate or shave my own but sometimes there are leftovers. If you are using it to melytonto something in the oven or under the grill, just chuck it on frozen
I only buy a small chunk at a time as a little goes a long way,if you use the smallest part of the grater. I then wrap it in foil and it keeps for weeks in the fridge ps don't buy the little tubs off the supermarket shelf it tastes like sawdust.
