Parmesan crusts

I buy samll blocks of Parmesan to grate for pastas etc. I've been putting the crusts in the freezer for ages. Any suggestions as to a recipe they could be used in please?

I use them to add flavour to stocks and stews, especially tomato based ones - remove the rind before serving though !

It's also quite interesting to add a rind to some plain boiled rice - it adds a lovely nutty taste !

If you google *parmesan rind recipes* rather than *parmesan crusts* you will find a whole rack of recipes out there !
I keep them for stews as well. Whenever I make a bolognese I lob one in at the start and fish it out before serving.
