I had some really nice rare tuna, practically raw. i cant believe its the tuna steak that you can buy from fishmonger usually put on a barbeque. They seem too flaky. Anyone know if its a different cut? Debbie
The more you cook tuna the drier / flakier it will become, or perhaps just tougher if it is cooked in a sauce.
You can eat tuna raw ie sashimi in Japanese cooking, and it is absolutely delicious, but make sure it is as fresh as possible.
