Prepped Veg - Fridge?

Hi there,

I live on my own, and when i prep some veg there is always left over - if i were to keep this in the fridge (chopped parsnip, sweet potato and peppers - mixed) should i fill my bowl with water prior to storing in the fridge?

I would not keep it in water.

I would keep it in an airtight container and I would not leave it more than one day before using it.
I wouldn't use water: they'd become soggy. Put them in as small a container as possible and cover tightly with plastic film. Should be good for quite a few days.
It is probably and idea to boil the root veg for a few minutes to blanch them before storing. The pepper should keep without blanching. Best way I have found is small plastic bags breathe in at the opening to remove as much air as possible. Incidentally, add some onion and all those ingredients would make a yummy soup.

Its weird, i dont really like veg soup - but i love veg lol

I waste so much aswell, as i get a veg box delivered every week, but living on my own i rearely get the chance to finish it all! :(

I keep my left over prepared veg in plastic bags (but not tied and sealed). Sounds to me like you need to do what I do - invest in a larger freezer, cook once a week after you get your veg box and freeze whatever you've cooked into individual portions. It doesn't take much longer to cook a larger pot of something (say a curry, a chilli or a stew) than a smaller amount. That way you have food for the week, you know exactly what's gone into it and you don't waste anything. Post again if you'd like some suitable (vegetarian) recipes !
Lakeland plastics do an excellent plastic container with a removable perforated base..it keeps veg fresh for much longer that just storing in the fridge.
I wouldn't be without mine.

wont the peeled parsnip and sweet potato discolour?
Sweet potato may discolour a little..but beleive me veggies kept in this type of container last!!!

I can't actually see the one on these pages..it is a lock andlock one it measures 9 by 11 and is 5 inches deep and has a white perforated tray inside.I think it cost around�10
Have had another look at the containers.If you look at the 9 litre one that has bread sticks in you will see that the base of this has a tray that holds the food from the base of the box.Mine is like this but not that size perhaps they have changed the sizes I have had mine for a couple of years now.
