Anyone have any good ideas how to use fennel? Thank yoy.

Or there is Fennel Risotto with Vodka
2large fennel bulbs, 2 tbsp veg oil, 6 tbsp unsalted butter, i large chopped onion, 360g?12oz arborio rice, 150ml/5 fl oz vodka or lemon vodka, 1.3L/2.25 pints veg stock, 55g/2oz grated parmesan, 6 tbsp lemon juice.
Roughly chop the fennel, reserving the fronds for garnish. Heat the oil & half the butter and fry the onion & fennel for 2 minutes. Add the rice and cook for another 2 mins. Mix the vodka & stock together. Add this mixture to the pan one ladleful at a time, until each ladleful is absorbed. (This should take about 25 mins. Stir in the lemon juice, cheese and remaining butter. Leave to stand for 1 minute then garnish with the fronds and serve.
