Pina Colada Cheesecake

I made some pina colada cheesecake at the weekend using cream cheese, condensed milk, dessicated coconut, fresh pineapple and coconut white rum - it tasted really good when we made the mix but when it had set and we sampled some it tasted really bitter, and the next day it was so bitter you couldn't eat it! any ideas why this happened, and does anyone have a recipe for a no bake pina colada cheesecake as mine obviously went wrong!
