Help - made an Indian curry from a recipe book using fresh spices etc but it doesnt seem thick enough . What can i add to make it thicker but not lose the flavour ( dont want to resort to Bisto ! ) thanks
Depending on what you're doing with the sauce (veg/meat/prawns) a coulple of good glugs of canned coconut milk could add great taste and will help to thicken the sauce as well.
take out the contents i.e. meat/veg and reduce the sauce in the pan. Add the contents back when you think it is thick enough.
Curries don't always have a thick sauce.

i know it's too late but dont add cornflour to curry! errgh!
Cook a fair bit of onion until light golden brown, drain the oil and blend. Add to curry. Or take the meat out of the curry, add these onions and blend the whole curry. This way the garlic, ginger and any other veg will add to the thickness.
