Has anyone got a tried and tested recipe for a really good, moist carrot cake?

Here you go ,lollyone......this is a a lovely one. It is an American recipe,so all the measurements are in 'cups'.....as long as you have a jug that will hold 250ml/8oz,you will be fine. 4eggs,3/4 C veg oil,1/2C apple juice,2tsp vanilla, 1C caster sugar, 1C soft dark brown sugar,2C plain flour,2tsp baking soda,2tsp baking powder,pinch salt,2tsp ground cinnamon,3C grated carrots Combine the wet ingrediants;combine the dry and add into the wet-mix well but don't overbeat. Pour into 2 greased and flowered loose-bottomed tins,bake at Gas Mark 4 for aprox 35-45 min.....you can check(just peep in!) at 30 min. I frost it with an orange buttercream...but if I can't wait it gets scoffed straight out of the tin....SO moist!!

hmmm... sound lovely. I'll def have a go at that. Am testing carrot cake from every supermarket and shop at the minute. Cant get enough.
