1 lb gooseberries, top and tailed and washed
2 tbsp sugar
for the crumble:
8 oz ( 220g ) plain, sifted flour
6 oz ( 170g ) unsalted butter
4 oz ( 110g ) caster sugar
1 pinch of salt
sift the flour with the salt into a bowl
add the cold butter and rub into the flour, until it looks like breadcrumbs
add the sugar and mix together
place the gooseberries and sugar into a greased ovenproof dish and cover it completely with the crumble mixture
place in a preheated oven ( 200c /400F )for 30-35 minutes until golden brown
serve hot with vanilla ice cream, delicious.

ELderflower makes Gooseberries delicious. If you cant source it naturally a drop of elderflower cordial does the trick. IT really does make it perfect.
I prefer using brown flour and brown sugar/or unrefined granulated in crumbles myself. I find the crumble is a bit to soft otherwise. Also to make it extra crunchy chopped pecan nuts go very well with gooseberries so sprinkle some of those on top.
