I used to make a lot of salads for the various 'events' for our local PTA '"do's". Pasta salad with diced peppers, sweetcorn, chopped spring onions and an oil and finely chopped mint dressing. Coleslaw - grated carrot, onion and finely shedded white cabbage with a mayo and natural yoghurt dressing . Potato salad with chopped herbs / red onions, also with a mayo/yog dressing. Platters of ham / thinly sliced beef / chicken. Maybe fish - salmon or smoked mackerel. Green salad - lettuce and watercress. Cucumber salad, tomato salad etc etc. And lots of fresh crusty bread and butter. You could serve dressings separately. Don't forget bowls of crisps / peanuts. Cheese and pineapple or cheese and cherry tomatoes on cocktail sticks not forgetting cocktail sausages. Most of this lot could be prepared a day or two in advance as long as you have 'fridge space. Although the bread is best bought on the day. I've always thought that sarnies and sausage rolls could be a bit boring but salads, etc., a bit more exciting and not, necessarily, harder to prepare.
