I am getting an AGA installed and would like some recommendations on the best sort of cookware to buy (Cast Iron, Aluminium, Stainless Steel etc). I currently have 18/10 gauge stainless steel pans but have heard that steel is a bit slow to heat up on AGAs and heavy aluminium or cast iron is better

Cast iron will also heat slowly, but will spread the heat well. I dislike aluminium cookware as it scratches easily, forms hotspots and deforms.
Everything on an AGA will heat slowly at first, but spreading the heat is important. If you want stainless steel go for copper-bottomed pans.
I digress a little, but, in case any one cares to know:
AGA stands for 'Aktiebolag Gas Akumulator'
