For more on marking an answer as the "Best Answer", please visit our FAQ.With regard to Skate (which can be the "wings" of any of the species of Rays), they need 2-3 days to lose their uric acid & ammonia pong & lose their inedible toughness, then only a few days more before they`re past their best. Always sniff, if possible (for ammonia) before buying. Bit like game birds which need to hang for a while to be best for eating, but not for as long.

We had the plaice, just dipped in seasoned flour and fried in a little butter and olive oil. A squeeze of lemon to finish - and they were delish!
I did feel a bit guilty though as they were very small. I think that maybe he should have put them back.
