They used to be sold in bakeries with a buttercream filling,I haven't seen any for many years now.Could anyone please tell me how to make them.Thank You.

3 whites of eggs
6oz caster sugar
6oz ground almonds
jam and butter icing
Beat eggs until very stiff, add a little sugar and beat again. Fold in rest of sugar and almonds put into a greased tin and bake in a moderate oven. When beginning to firm mark with a small round cutter and continue to bake for another 1/4 hour. When cool put 2 rounds together with butter icing wet the edges with melted jam and roll in the crumbled cuttings.

Not too far from you - it is in Longridge. Come off the M55 at the Preston junction (just before it joins the M6) and head north on the A6 towards Garstang. Turn right at the first set of traffic lights (there is a Texaco garage and Burlingtons pub on the corner) onto Whittingham Lane. Follow this road for about 3 miles through Goosnargh (just before the Stags Head pub is Goosnargh post office - Corner Bakery supply this shop and sometimes (not always) has japs)and the road takes a sharp right turn and becomes Cumeragh Lane. Keep straight on for another couple of miles until you come to a roundabout not long after passing the Longridge sign. Turn left at the roundabout and a couple of hundred yards or so on your left is Corner Bakery. This is where you will find japs. If you come to a mini roundabout you have gone too far - turn round and look again!
