Can you make chips in a deep fat fryer using a sweet potato?

Chipped, cooked and eaten. Not the best chip I have tasted. A bit soft in the inside and not very crispy on the outside.
I am now roasting a few with Olive Oil drizzled over them.
I love sweet potatoes. I eat them roasted but I never tried them fried. I shall avoid them in that case.
I replaced plain potatoes in stews with them as well.

Roasted was really nice with a small sprinkling of coarse sea salt.
I think they make great mash too, and are nice in curries.

Woofgang gave me a recipe here many years ago which was very, very yummy. Peel and boil sweet potato and mash with a little butter. Place in a gratin dish, drizzle a little maple syrup on top and then parmesan cheese. Bake in oven until crispy on top.
