I am trying to lose weight and I love chicken but it can get a little boring. Has anyone got any good tasty recipe ideas that are low fat. Thanks.

Also maybe try marinating some chicken then cooking on a big george with some over cooked potato wedges, cold chicken and salad, chicken stir fry with loads of veggies, there's lots!

Chicken adobo - this is really tasty.
In a deep skillet, put some chicken breasts or thighs, and add:
1 cup of your favorite vinegar
1 cup of soy sauce
thinly sliced fresh ginger (as much as you like)
minced garlic (as much as you like)
ground black pepper
a couple of spoonfuls of sugar (totally optional)
Bring to a boil, lower the heat, cover, and simmer for an hour. Turn the meat a couple of times while cooking.
I make this and serve it over rice or over simple cornmeal mush, with sauteed kale or collard greens.
Piri piri chicken (for 1 person) - roast a de-seeded and halved red pepper for half an hour in a hot oven. Peel it and whizz in a processor with a clove of garlic, 1 chopped and de-seeded red chilli, 1 measured teaspoon of oil, 1 tbsp white vinegar and a pinch of salt. Cover a chicken breast with it and either put in the oven or grill for about 20 mins. It's gorgeous!
