panini fillings

has anyone got any nice fillings for panini's one's my children would eat, aged 11 & 14

shredded cheese & carrot with mayo.
Matchstick sliced (cut with scissors) cucumber, rock salmon
mashed hard-boiled egg & sliced smoked salmon
Matchstick sliced danish-sausage & shredded cheese
crumbled cheese/onion crisps, grated nuts & lettuce
crab meat & cucumber



The kids around here like this one and it's simple to make:

1 cup mayo
1/4 cup fresh chopped herbs such as parsley, basil or chives
12 slices Smoked Turkey Breast
8 slices Swiss Cheese
16 slices Thick Cut Bacon, cooked and drained
1 tomato, cut into 2 slices per sandwich
8 slices sourdough or Tuscan bread
3 tablespoons butter, softened

Combine mayo and herbs; set aside.

Place 3 turkey slices, 2 cheese slices, 4 bacon slices and 2 tomato slices on half of the bread slices. Spread remaining bread slices with mayo mixture; place, mayo sides down, on tops of sandwiches.

Spread the outsides of sandwiches with butter.

Brown in a skillet on medium heat until lightly brown on both sides.



Sausage, pre-cooked or pepperoni, on their own or with cheese, tomato sauce etc...

Ham and cheese, can do with tomato to make it more pizza like.

Oven roast veg like pepper, mushroom, courgette, aubergine and onion.

Curry.

Cream cheese, nice with ham or garlic sausage.

Leftover meat from a roast.

Garlic sausage.
