Need help with menu!

I've got to choose what I want for the office Christmas meal but I don't understand half of the menu! Can anyone help me with the following terms:
Lancashire cake - I live in Lancashire and I don't know what this is.
mizuna vinaigrette
veloute
basil pistou
duck confit
pea and parmesan frittata
herb emulsion
leek and potato boulangere
I'm sure ordering food shouldn't be this difficult!

Lancashire cake - think its a savoury cake made from vegetables
Mizuna Vinaigrette -
Mizuna is a Japanese green with a delicate mild mustard taste, it has long
jagged dark leaves with long stems. Vinaigrette - salad dressing
Pistou - soup
Duck confit - I think it's duck with herbs
Frittata - An egg dish from Italy, with your favourite vegetables added, eaten hot or cold. Makes a light lunch, starter or eaten cold for a picnic.
Not sure about the rest cos I ran out of time..the new green house has arrived and I gotta help put it up!!! No peace for the wicked!!
Hope this helps. The only other thing to do ask the resturant, but do it on the quiet so no-one else knows, them explain it to the rest of the 'works'. Will make you seem a genius!!!

Any restaurant that has to big itself up by using confusing words like this must be cr*p.
Vinaigarette - sauce made with vinegar
Veloute = white sauce made with stock instaed of milk
pistou = French version of Pesto (an Italian Sauce)
Duck Confit = Duck cood and preserved in it's own fat
Herb Emulsion = a glossy sauce made with herbs
boulangere = a dish of layered potatoes and onions with milk.
frittata - Italian Omlette similar to a Spanish omlettte

I've ordered 'Hot smoked' salmon with its own crispy creamy Lancashire cake and mizuna vinaigrette, followed by corn fed chicken supreme with leek and potato boulangere, crispy pheasant fritter and a tangy green tomato salsa.
Now all I have to do is remember what I've ordered for 3 months!
I've not been to this restaurant before but it's got a good local rep. so I hope it's not crap.
Whatever happened to turkey and all the trimmings for Christmas dinner ? Maybe i'm just old fashioned but this is all a bit too fancy for me. I would have been very disappointed in this for a Christmas dinner menu but each to their own. I had to have a sneaky peek at the answers given though because if you will excuse my ignorance , I didn't have a clue what any of them were ! Hope you have a lovely dinner and a great night out at Christmas x
