Risotto- where to start ?

Hello!
Does anyone have a tried and tested recipe for Chicken and Mushroom Risotto please ? I have not ever cooked anything like risotto before but I tried this in a restaurant recently and loved it.

I've used this one before. Its yummy. I like the bacon, but you could leave it out if you wanted.

With risotto or paella, do get the rice grains well coated with oil for some minutes until just starting to colour. You`ll need 3oz rice per person About 1&1/2 cups for 4) & about 1& 1/2 pints of hot chicken stock which should be added gradually to the rice when ready. Traditionally these dishes are coloured with an infusion of saffron, but if you haven`t any or can`t afford it, then turmeric will give a nice colour. I also like to use paprika. The rice normally takes about 20 mins to absorb the liqid, being stirred occasionally. Don`t allow it to get soggy, Italians like theirs "al dente" as with pasta.
