Mix onion, garlic, curry, ginger, salt, cumin, and ground red pepper and cook for 1 minute in a large pan. Stir in broth and carrots; cover and cook 5 minutes. Meanwhile blend garlic and butter together and spread on pita bread. Stir peas into pan and heat through. Make up couscous according to instructions. Ensure it has been fluffed up prior to serving. Bake pitta bread in oven until starting to turn golden.
