If I take a chicken out of my freezer on Monday and have Roast Chicken, then make a chicken curry with the leftovers on Tuesday, is it safe to freeze the chicken curry for use at a later date?

Assuming the chicken you remove from the freezer on Monday is uncooked then yes you can freeze the curry.
Totally agree with Mrs O. When cooked any bacteria would be killed off so safe to freeze. However, if you were just heating the chicken through from the freezer this wouldn't kill any bacteria so it wouldn't be safe to freeze.

Thank you mrs overall and coccinelle. Yes my chicken is uncooked and frozen so I'm OK
Yes. You can defrost frozen raw meat, cook it and then freeze the cooked meat - perfectly safe. Enjoy your curry!!
