Do you like mushrooms, I think they are a very versatile veg, good in curries side dishes etc, but what is the best way to cook them to save them from disentigrating!
I often get find mushrooms while i'm walking the dog and I usually have them for breakfast fried with bacon and eggs,they make a black "gravy" that you dont seem to get with farmed ones,that tastes great soaked up in fresh bread. As you say they go into anything from salads to casseroles
I either use them whole (say in mushroom dupiaza or other curry dishes when I use button mushrooms or small open cap ones) or thickly sliced open cap (again for curries or stews) or thinly sliced (on pizzas or in omelettes).
I sometimes rehydrate dried mushrooms (the lovely exotic ones for stews and casseroles) but they come as they are. Now truffles and truffle oil are another matter ...lol
Ohhhh I forgot to mention those huge open field mushrooms are glorious when filled with a tasty risotto and then topped with some smoked applewood cheese and browned off under the grill.... Heaven on earth !
I wash them, slice them, put them in a bowl with sliced onions, add garlic, black pepper with some butter or oil, and stick them in the microwave for a few minutes, depending how many.
lol vibrasphere.. it's been years since I had magic ones.... lol.. actually Christmas 1987 passed in a bit of a haze, as did some of the following year... I brewed some porter that year too... wow, that was good as well hehe
