any1 got any good reciepes for the above, my mum used to make ones with a really squigy middle, want to try my own!!

� cup (1 stick) butter (1/4 pound)
1 cup light brown sugar
3 tablespoons granulated sugar
1 large egg (room temperature)
2 teaspoons vanilla extract (real vanilla is best)
1 � cups all-purpose flour
� teaspoon baking powder
� teaspoon baking soda
� teaspoon salt
1 � teaspoons instant espresso coffee powder
1 � cups semi-sweet chocolate chips (We use Hershey's)
Preheat oven to 300 F. Cream the butter with the sugars until fluffy using an electric mixer on medium speed (apx 30 seconds).
Beat in the egg and vanilla extract for another 30 seconds.
In a mixing bowl, sift together the flour, baking powder and baking soda and beat into the butter at low speed for about 15 seconds. Stir in the espresso coffee powder and the chocolate chips.
Using a 1-ounce scoop or 2-tablespoon measure, drop cookies onto a greased cookie sheet about 3 inches apart. Gently press down on the dough with the back of a spoon to spread out into a 2-inch circle.
Bake for about 20 minutes, or until nicely browned around the edges. Bake a little longer for a crispy cookie. Makes 2 dozen cookies.

Here's another exceedingly easy recipe, this time for Peanut Butter Cookies... they also taste fantastic ! I actually put a bit more peanut butter in than they suggest but that's cos I love the stuff (I use the crunchy, whole-earth type rather than a commercially produced smooth one but that's up to you !)

10 oz self raising flour
8 oz softened butter or marg
6 oz sugar
vanilla extract
optional
glace cherries
dessicated coconut or rolled oats
Mix the butter and sugar together well
add the flour and mix until a "dough" is formed
add 1/2 reaspoon vanilla
On a greased baking tray.....make the "dough" into golfball sized balls and roll into the coconut or oats if desired (slightly wet hands may make the coconut or oats stick better when doing this)
When all the dough is used up....(i can make about 15 -18 balls from the above) flatten the balls with the palm of the hand a little and then add half a glace cherry to the middle
Bake at 180 for 15 minutes or until golden brown.
Simple, easy-peezy delicious biscuits.
