Hi eve just come in.just like other meats put oven on at 160c 170c,place meat in roasting tray tad of rock salt if liked, add a smidge of water as previously said, and top up if needed in cooking period,i would say maybe 90minutes,test with fork to see if any red juices come out,if so keep in until it runs clear, then rest for twenty minutes thats a seriously nice bit of lamb, betch that cost you, enjoy!!!
I suppose this is too late for you-but here is some information anyway-It should be a minimum of 78deg for 30 seconds.....this is the amount of time the temp prob should be left in. When I cook joints at work the temp will often go well above 85+deg

Thanks to both of you. You came out tops with advice as always. Lamb turned out a treat thanks to your help (again). I left the probe in till it read 80deg.

I must be getting on in years...recently developed a love of gardening and a love of cooking...

Doing lots of experimenting in the kitchen (cooking that is nowt involving my buns on the counter ....!) and must say most times it comes out alright. BUT....Cos a joint 2 roast can be pricey I always want your ADVICE 1st though.
