Slice it thin and eat it on a sandwich with your favorite other sandwich ingredients.
Cube it and pan fry it in a little peanut oil until it browns on all sides. Stir fry some baby bok choy and mushrooms and throw the tofu in at the end with a sauce of 1 part water, 1 part soy sauce, a few squirts thai fish sauce, and a little honey. Serve it over rice.
Crumble it and scramble it into some eggs, with a chopped bell pepper, a chopped tomato or two, and maybe some chorizo or other spicy sausage.
Grill it!
