What to do with left-over pork

Will be roasting a joint of pork sometime this week and will definitely have left-overs as there are only two of us. Does anyone please have some tasty recipes to finish it off?

have it cold with bubble n squeek, served with loads of pickle !!!!

Cold with chips, a fried egg and mustard.

How about a nice pork stroganoff with mushrooms, cream and a dash of mustard.

Served with thick noodles or creamy mash.

Substitute the pork for the lamb.

whenever i have any left over meat it always gets cut up to go into either a stirfry or a curry. yummy!
