Healthy Snacks and Meals

Hi all,
I am starting a healthy eating plan from Monday and I need to come up with ideas for healthy fresh snacks and meals ........................ my problem being I am a fussy eater. I do not like most salad like lettuce, cucumber, celery etc and I am not keen on fish either. I am not overkeen on red meats either but I do love chicken.
Does anyone have ideas of healthy snacks or recipes (whilst keeping costs low)?
I was thinking of baking vegetable slices like sweet potato and parsnip to make vegetable crisps - has anyone ever made them and if so what termperature oven do you cook them and for how long?
Any ideas will be greatly appreciated.

For more on marking an answer as the "Best Answer", please visit our FAQ.Well, based on what the veggie next to me eats EVERY day at work, try a whole bag of clementines (that's 10 or 11), starting at 10am until 11:30am, followed by 4 apples, a 30 minute break, then a huge plastic container of salad and a smaller container of pasta with mayonnaise, all forked in noisily even when on the phone. Then spend 10 minutes picking your teeth.
Either that or an occasional Marmite rice cake.

Soak some couscous and add some finely chopped freshly cooked veg and spices... lovely for a lunchtime snack...
Baked potatoes - good with low fat cheese, baked beans, left over chilli or coleslaw.
Stuffed tortilla wraps - fill them with some of last night's curry or chilli and simply heat up in the microwave.. nice with some crunchy lightly cooked cabbage added.
Slice up some parboiled potatoes (seasoning them as yo go), grate some low fat cheddar, finely chop some onion or shallots. Place layers of each ingredient in a lightly greased baking dish and pour over a couple of beaten eggs. Pop into a hot oven and heat through for 30 mins... lush served up with some fresh veg (say sweetcorn and petit pois).

hey this is nice lunch/snack i do for myself when we've got hardly anything in the house
its simple and tasty and easy to adapt
toast 2 slices of bread then spread a little tomato puree on them then top with whatever cheese you want then place under the grill until cheese is melted
you could use low fat cheese and put a little chicken on top to make it more substantial
works well with the heels of a loaf of bread
