There are thousands of different recipes for Welsh Rabbit (which is the
original name for the dish, before restaurants 'smartened it up').
Many people would suggest that the key ingredient missing from your list isn't eggs but
beer.
This recipe comes from the book that came with my (700W) microwave oven. (I might vary the ingredients but it provides a good starting point):
For 4 servings:
Ingredients:
1 pound (4 cups) grated cheddar cheese.
3 tablespoons flour.
Two thirds of a cup of beer
� teaspoon Worcester sauce.
� teaspoon dry mustard.
Toss the cheese with the flour.
Heat the beer on full power until boiling (1� to 2 minutes)
Gradually add half of the cheese mixture, together with the Worcester sauce and mustard, stirring until smooth.
Cook on half power for 2 to 2� minutes, stirring once.
Add remaining cheese mixture.
Cook on half power for 3 to 3� minutes, or until cheese is fully melted, stirring once.
Serve on hot toast.
