Insert a small hole in the fillet and stuff with dried apricots. Season and seal in a frying pan and finish off in the oven for 10 minutes or until the juices run clear.

Are you sure it is a pork fillet and not a fillet of pork? A pork fillet is a narrow round sausage shaped piece of meat . A fillet of pork will be off the top of the leg and will be much bigger.

Think you might be talking about the loin as in loin chops..if you are talking about fillet of pork the "sausage like" its also called tenderloin. really tender doesn`t need a lot of cooking
