Avocado and mozzarella.
Boiled egg, new potato and tomato with either salad cream or olive oil and lemon dressing.
cook some pasta, and sausage add that to salad and i like a honey mustard dressing with this one.

try getting jars of marinated artichokes, olives, peppers etc and adding a few of these (you can use the oil to make a fab dressing as well)

thanks for the inspiration!
tandoori chicken salad
buy some ready cooked tandoori chicken pieces.
mix together some mange tout, chicory, curly endive, watercress, chopped mango and chopped orange segments.
mix together 3 tblspns mayo, 2 tblspns orange juice and finely grated orange rind. add to salad.
mix in the chopped chicken and sprinkle with flaked almonds.

you can vary all the ingredients as to what you happen to have in (various lettuce, different meat, different nuts, grapes, nectarine, peach, tomato, etc.) and what you like.
Some that I do are:
Roast chicken breast (wrapped in foil) with fresh ginger, lemon and garlic. Sometime I use coriander or tarragon with some olive oil.
A plain chicken breast but I add some potatoes and mayo to the salad.
A basic ham and egg salad is good as well.
Roasted pine nuts with roasted baby plum tomatoes with baby leaf spinach.
Feta salad with olives cumber, red onion etc.
Tuna nicoise.
Not really a salad but I roast veg like peppers, courgettes, red onion with a dollop of hummus

I like your ones so I'm adding those to my list!
salad and a nice cream cake to follow does the trick for me lol
Feta cheese and olives
Chopped fennel and cubed wesleydale.
