I bought a pack of cherry tomatoes today. They are red and a bit green and the red is not very dark. Does this mean they are under ripe or over ripe or past their best or what?

I'd think it'd mean they haven't reached full ripeness - but I prefer them like that anyway, as opposed to bright red squashy things. Stick a fork into one of those, and you just get splattered with seeds! : )
Under ripe... put 'em in a paper bag (not plastic) with an apple for a day or so... or set them on the window sill in the sun...
True.
Let them ripen...then the.flavour develops...they are also higher in nutrients then.

But don't wait until they are.'soft and squishy'.....icey -what ARE you doing??! LOL
