Visible signs of pork being out of date

Hi, I'm in the process of cooking a pork shoulder thing that might be out of date and was wondering if there are any visable signs that it might be out of date, it is a bit redder looking on the outside and before i started cooking it so thought i'd better ask somebody as nobody here knows. Cheers.

It's red as the outside has dried out ..
just make sure it's cooked really well..
enjoy ..
the smell is probably the best test
if it don't smell too good
don't eat it
Yeah, it wont smell good if its off. Out of all the common meats, pork, IMO, is the one that goes off the quickest, even sometimes before reaching its use by date.
If in doubt throw it out

Thanks everybody. I ate it and it was amazing! My flat mate actually stole it from the bins at Waitrose on the Sunday night and froze it so I defrosted it and cooked it the next day, I think it was red due to being a bit dried out as somebody had burst the packet it had been in slightly but there was absolutely nothing wrong with it and was delicious!
