i'm roasting a goose todaY. any tips on cooking technique appreciated....thankks in advance....

Put it on a wire rack over a roasting tin. Put a little water in the roasting tin. The steam helps to keep it moist and succulent.
Dont add extra fat/oil. Breast down for first half hour, turn over (drain excess grease into heatproof container to cool). Cover breast with foil for 20mins. Remove foil 10mins before finish & sprinkle with salt to brown & crust. All no.6 gas.
