I have some jars of pasta sauce (tomato and basil etc.)
Can I use these straight from the jar to use with bread sticks and tortilla chips as a dip?

But what would be nicer is if you cook up some say....corgettes, peppers, onions etc and add the sauce.
Yup. Tastes good. And no hard work.
I don't see why not...but to make more like a dip,mix with greek yoghurt,cream fraiche or sour cream.
pasta sauce that is of a thin consistency wouldnt work as well as a dipping mixture as it would run off the bread stick/crisps
