Surplus mint

The mint in my garden has run amok! I am planning to dig most of it out and put the remainder in pots but does anyone know how to "preserve" some of the mint leaves for use in the winter months.

Chop some and put in ice cube trays with water then freeze. Pop into boiled pots and lamb casseroles etc.

Also dry some (hang a bunch up in a dry airy place), and store in an old jam jar.

Make some mint sauce - yum
a friend of mine used to make mint jelly in the microwave. she said it was really easy, never did it myself though. even though i love mint sauce, i don't like mint jelly, like eating toothpaste.
Cut off whole stalks, tie them together and hang them up high in the airing cupboard. leave them there and check once a week, when they are dry and brittle remove the leaves and put in jars. You now have dried mint to use all year.
Or - clean out an empty 2 litre soft drinks bottle eg lemonade etc. Strip about 2 good hand fulls of fresh leaves from the plant and bruise with a mallet or morter and pestle. Put into a jug and fill with boiling water, leave to go cold. Strain well, then pour the liquid into the bottle and fill with cold fresh water. Keep in fridge, it's makes a lovely refreshing drink.
Sorry ethandron but I love Mint Jelly and that is what I am going to make with some of my surplus mint.Loads of recipes available on google,delicious with lamb.
