Broccoli query,please..

I read recently that if you cooked broccoli too much you lost half the (considerable) goodness in it.

So, once you've put the broccoli in boiling water how long should you leave it there??

Steaming it retains more 'goodness'. I usually steam it for 6 to 8 minutes. Boiling it probably takes the same.
If I'm boiling broccoli I add it to a pan of boiling water for no more than 5 mins.
You can also cook it very quickly (2-3 mins) in a stir fry.
I also like it raw, cut into florets. Give me a pile of raw broccoli & some hummus or guacamole and I'm in heaven!

Yes, I heard using it raw as a dip was good too.
Plunge the florets into boiling water to which a pinch of salt has been added... leave them in for only 1, at most two minutes. Remove and place in a pre-prepared bowl of ice water. Flavor, color and nutrition will be retained...
