Many people like to rub butter on the cut edges of the cheese to keep it from drying out. I like to wrap the cheese tightly in saran. I always discard a very thin sliver from the cut edge before I discard it. Parmesan does not spoil like soft cheese and will last until it becomes dry and unpleasant to you.
