I'm cooking a goose for Christmas dinner (I've got the details of how to do that), but what do I do with the lefttovers (there's bound to be some), can I make goose curry or whatever, or eat it cold?

There is much less meat on a goose than on a turkey. Depending on how many of you there are, you may well find that there's not much left after the meal.  I should eat the leftovers cold.

Yes, you can make goose curry, but better would be goose cooked in burgundy or a dark red wine sauce.  Make it sweet and serve with minted new potatoes (if you can get them at this time of year).  This is a very romantic meal and a great mood setter, so be sure to have soft lights or candles at the ready, and smoochy music on the CD player.
... and the goose fat on standby!!!
Depends on how many you're expecting one goose to feed, but there probably won't be any leftovers at all if there's more than three of you.
