Lemongrass

Hi

I saw on a programme someone soaking lemongrass in hot water as it makes it softens it and makes it easier to blend.

has anyone done this?

making thai on the 1st. i make a thai paste and to find even though i blend it for ages theres always a few tough bits.

I tend to bruise the lemongrass and infuse in simmering coconut milk if I am making a green curry. I must confess that I don't make my own thai paste.

Buy as fresh as possible from a Chinese supermarket if there's one nearby. Otherwise, all you need to know about dealing with lemongrass can be found here...
