Has anyone got any tips on how to make fried rice just like the chippy does?Mine always turns into a claggy mess.If having egg,I scramble this first,and use cooked long grain rice,but the flavour is missing that MSG ommph.5 spice,soy sauce,ginger and garlic all come up in the books,but has anyone got a tried and tested recipie/tips they dont mind sharing?Thanks

As tambo said - get the rice really dry if you forgot to cook it the day before you could try spreading it out in a low oven for a very short while. I whisk the raw egg up and add it in small drips stir, and drip again etc that way you get nice little bits of egg mixed in the rice rather than the egg coating the rice and producing claggy lumps.
I add soy sauce and a few drops of sesame oil for flavour plus sliced spring onion garlic and grated ginger - a few peas and sometimes a bit of chilli sauce or powder. Yum

As mentioned, cook it the day before and keep it in the fridge.....cold rice seperates far better.
If i don't have time for that, i boil it, drain it then run a kettle full of boiling water over it whilst it's still in the sieve just to get rid of the excess starch.
Then, just like woozer above, i add some peppers, spring onion, grated ginger, garlic, soy sauce, honey and a couple of beaten eggs.
