cake help!!

okay, so in a moment of madness I said I'd bake cakes for the team at work. I so don't bake cakes!
does anyone have any sure-fire, impressive recipes? I guess I need to make about 12 individual cakes. I was thinking chocolate chip muffins.. I can see recipes online, but are they idiot proof? I don't want to be buying fancy equipment that I'll never use again, and only have a hand-blender. (I have an oven, lol!)
I have no ingredients and will be going shopping later today, and will have a practice run first :o)

keep an eye out for silicone cases. they dont flop and can be reused over and over.

Hey sara. I use my nan's recipe which is superb.
I just weigh 3 or 4 eggs, and match that weight with s/r flour, margarine and sugar. Beat the marg first til pale and creamy, add sugar, then flour sifted in. I use electric whisk. Turn cake mixure into greased tins and back for 30 mins at gas mark 6.

when i make smaller cup cakes i have them on 180 c for 12-15 minutes.
and cup cakes are less stogey.
Choc Orange Cupcake Recipe makes about 20
Ingredients
80g milk chocolate - coarsely chopped
1 1/2 tsp orange rind - finely grated
1 cup orange juice
140g butter - softened
1 1/2 cup brown sugar but white or even splenda works aswell
3 eggs
1 cup self raising flour
3 tbsp cocoa powder
Method
1 Pre-heat the oven to 180 c
2 Fill a tin with 20 cases
3 Place the chocolate, orange rind and juice in a small saucepan.
4 Stir over a low heat until melted and smooth.
5 Put the butter, sugar and eggs in a small bowl and beat with wisk until light and fluffy.
6 Sift the flour and cocoa into the butter mix. Add the chocolate mix.
7 Mix until just combined.
8 Divide the mixture evenly between the cake cases.
9 Bake for about 15-20 mins (BUT CHECK AFTER 10 TO SEE HOW THEY ARE DOING)- until firm to touch.
