umami is meant to be a creamy, mushroomy taste isn't it? i'd like to try it, but have we still not got a word for it?
Waitrose should be stocking it now, in a tube called Taste No.5.

It is made of:
Tomato purée
Garlic
Anchovy Paste (anchovies, salt, sunflower oil)
Black Olive
Balsamic Vinegar
Porcini mushrooms
Parmesan cheese
Olive oil
Vinegar
Sugar
Salt
It roughly translates to the English word "savory". We don't have a word for it 'yet'? I suppose in the same way we don't have a word for 'nonchalance" yet.
